In this cooking class you will learn how to make pizza scima, an ancient unleavened bread (the recipe was brought to Abruzzo by Jewish communities which settled on the coast in the 16th century), a quick unleavened pizza with seasonal toppings, tarallucci al vino in two versions – sweet and savoury. All these using just a few humble traditional ingredients.
During the class we will also talk about different types of heritage grain flours that are undergoing a revival in Abruzzo.
